    Preparation

    Remove the Wagyu Chateaubriand from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. Preheat your oven to 200°C (400°F).

    Seasoning

    Generously season the Wagyu with salt and black pepper on all sides.

    Searing

    In a large, oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the Wagyu Chateaubriand and sear for 2-3 minutes on each side until a golden-brown crust forms.

    Adding Aromatics

    Add the garlic cloves and fresh rosemary to the skillet. Spoon some of the oil over the meat for added flavor.

    Roasting

    Transfer the skillet to the preheated oven. Roast the Wagyu for approximately 15-20 minutes for medium-rare, or until it reaches your desired doneness.

    Basting

    During the last 5 minutes of roasting, add the butter to the skillet and baste the meat with the melted butter for enhanced flavor.

    Resting

    Remove the skillet from the oven and let the Wagyu rest for at least 10 minutes before slicing. This allows the juices to redistribute.

    Slice the Wagyu Chateaubriand against the grain and serve immediately, drizzling any pan juices over the slices.
