    Roast the Cauliflower

    Preheat the oven to 425°F (220°C). Cut the cauliflower into florets and toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden and tender.

    Sauté the Aromatics

    In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté for about 5 minutes until the onion is translucent.

    Combine and Simmer

    Add the roasted cauliflower to the pot along with the vegetable broth, thyme, and nutmeg. Bring to a boil, then reduce heat and let simmer for 10 minutes.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. Alternatively, you can carefully transfer the soup to a blender in batches.

    Add Coconut Milk

    Stir in the coconut milk and adjust seasoning with salt and pepper to taste. Heat through for another 5 minutes.

    Ladle the bisque into bowls and garnish with a drizzle of olive oil or fresh thyme if desired.
