Prepare the Pork
Pat the Kurobuta pork shoulder dry with paper towels. Rub the minced garlic, salt, black pepper, smoked paprika, and dried thyme all over the pork.

Sear the Pork
In a large skillet, heat the olive oil over medium-high heat. Sear the pork shoulder on all sides until browned. This should take about 5-7 minutes.

Prepare the Slow Cooker
Place the chopped onion and bay leaves at the bottom of the slow cooker. Add the seared pork shoulder on top.

Make the Sauce
In a bowl, mix together the soy sauce, brown sugar, and water. Pour this mixture over the pork shoulder in the slow cooker.

Cook
Cover the slow cooker and cook on low for 8-10 hours or until the pork is fork-tender.

Serve
Once cooked, remove the pork from the slow cooker and let it rest for a few minutes before slicing. Serve with your favorite sides.
