    Prepare the Duck

    Score the skin of the duck breasts in a crosshatch pattern, taking care not to cut into the meat. Season both sides with salt and black pepper.

    Cook the Duck

    Place the duck breasts skin-side down in a cold, dry skillet. Turn the heat to medium and cook for about 6-8 minutes until the skin is crispy and golden. Flip the breasts and cook for an additional 4-5 minutes for medium-rare. Remove from the skillet and let rest.

    Make the Sauce

    In the same skillet, drain excess fat, leaving about 1 tablespoon. Add chopped shallots and sauté until softened. Pour in red wine and scrape the bottom of the pan to deglaze. Add chicken stock, thyme, and balsamic vinegar. Simmer until reduced by half and thickened.

    Serve

    Slice the duck breasts and serve with the rich sauce drizzled on top.
