Pretzel Preparation

Activate the Yeast
In a large mixing bowl, combine warm water, sugar, and yeast. Let sit for about 5 minutes until frothy.

Mix the Dough
Add the flour and salt to the yeast mixture. Mix until a dough forms.

Knead and Rise
Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.

Preheat and Prepare Baking Sheets
Preheat the oven to 450°F (232°C) and line baking sheets with parchment paper.

Prepare Boiling Solution
In a large pot, bring 10 cups of water and the baking soda to a boil.

Shape the Pretzels
Divide the dough into 8 equal pieces and roll each into a long rope (about 24 inches). Shape each rope into a pretzel.

Boil the Pretzels
Carefully place each pretzel into the boiling water for about 30 seconds, then remove and place on prepared baking sheets.

Sprinkle coarse sea salt on each pretzel and bake for 12-15 minutes until golden brown.
