    Prepare the IPA Cheese Whiz

    In a saucepan, melt 2 tablespoons of butter over medium heat. Stir in 2 tablespoons of flour and cook for 1-2 minutes. Gradually whisk in 1 cup of milk and 1 cup of shredded cheese (preferably a mix of sharp cheddar and a mild cheese) along with 1/2 cup of your favorite IPA beer. Continue to stir until the mixture thickens. Season with salt and pepper to taste. Set aside.

    Cook the Vegetables

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add sliced onions and green bell peppers. Sauté for about 5-7 minutes, or until the vegetables are softened and slightly caramelized. Remove from pan and set aside.

    Cook the Ribeye

    In the same skillet, add the thinly sliced ribeye steak. Season with salt and pepper and cook for about 3-5 minutes, or until the steak is browned and cooked to your liking.

    Assemble the Sandwich

    Split the hoagie rolls and lightly toast them on the grill or in the oven. Layer the cooked ribeye, sautéed onions, and peppers inside the rolls. Drizzle generously with the IPA cheese whiz.

    Serve hot with a side of fries, chips, or your preferred side dish.
