Prepare Vermicelli Noodles
Start by cooking the vermicelli noodles according to the package instructions. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

Make the Dipping Sauce
In a small bowl, whisk together the soy sauce, peanut butter, honey, rice vinegar, sesame oil, and chili sauce until smooth. Adjust seasoning if necessary.

Soak Rice Paper Wrappers
Fill a shallow dish with warm water. Take one rice paper wrapper and dip it into the water for about 10-15 seconds until it softens. Carefully remove and lay it flat on a clean surface.

Assemble the Spring Rolls
On the lower third of the softened rice paper wrapper, place a small amount of vermicelli noodles, followed by a few mint leaves, cilantro leaves, shredded carrots, cucumber, and 2-3 pieces of shrimp. Be careful not to overfill.

Roll the Spring Rolls
Fold the sides of the rice paper wrapper over the filling, then roll it up from the bottom to the top, tucking in the filling as you go. Repeat this process for all rice paper wrappers and filling.

Serve
Arrange the spring rolls on a serving platter and serve with the dipping sauce. Enjoy!
