Cook the Rice
Combine the short-grain rice and water in a rice cooker or saucepan. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes until the water is absorbed and the rice is tender. Let it sit covered for an additional 10 minutes, then fluff with a fork.

Prepare the Vegetables
In a medium skillet, heat 1 tablespoon of sesame oil over medium heat. Add the julienned carrots and sauté for about 3-4 minutes until tender. Remove from the pan and set aside. In the same skillet, add another tablespoon of sesame oil and sauté the zucchini for 2-3 minutes until tender. Remove and set aside. Sauté the spinach in the same skillet until wilted, about 2 minutes, and then set aside. Lastly, in the skillet, add the sliced mushrooms with a bit of oil and sauté until they are soft, about 5 minutes. Remove from heat.

Assemble the Bibimbap
In a large bowl, place a serving of cooked rice at the bottom. Arrange the sautéed vegetables (carrots, zucchini, spinach, and mushrooms) on top of the rice in sections. Top with a fried egg in the center. Drizzle with soy sauce and gochujang to taste, and sprinkle sesame seeds over everything.
