Wash and peel the Russet potatoes. Cut each potato into evenly sized sticks, about 1/4 inch wide.

Soak the Potatoes

Soak the cut potato sticks in cold water for at least 30 minutes to remove excess starch. This will help them become crispier when fried.

Dry the Potatoes

After soaking, drain the potatoes and pat them dry with a clean kitchen towel or paper towels. Make sure they are as dry as possible.

Heat the Oil

In a large, heavy pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can check the temperature with a deep-fry thermometer.
