Mousse Preparation

Prepare the Hazelnuts
Preheat the oven to 350°F (175°C). Spread the hazelnuts on a baking sheet and toast them in the oven for about 10 minutes, or until golden and fragrant. Let cool, then chop finely.

Melt the Chocolate
In a heatproof bowl, melt the milk chocolate over a pot of simmering water (double boiler method) until smooth. Remove from heat and let cool slightly.

Whip the Cream
In a large bowl, whip the heavy cream until soft peaks form. Gently fold in the vanilla extract and chopped hazelnuts.

Prepare the Egg Whites
In a clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the granulated sugar and continue beating until stiff peaks form.

Combine Ingredients
Gently fold the melted chocolate into the whipped cream mixture. Then, fold in the beaten egg whites in three additions, being careful not to deflate the mixture.

Chill the Mousse
Spoon the mousse into individual serving dishes or a large bowl. Cover and refrigerate for at least 2 hours or until set.

Serve chilled, optionally garnished with whipped cream or additional chopped hazelnuts.
