Prepare the Béchamel Sauce

    Make the Roux

    In a saucepan over medium heat, melt 2 tablespoons of butter. Add the flour and whisk continuously for about 1 minute until it forms a paste (roux).

    Add Milk

    Gradually add the milk while whisking to prevent lumps. Continue to cook, whisking constantly, until the sauce thickens (about 5 minutes).

    Season the Sauce

    Stir in nutmeg, salt, and black pepper. Remove from heat and set aside.

Assemble the Sandwiches

    Layer Ingredients

    On 4 slices of sourdough, layer ham, Gruyère, and Emmental cheese. Top with another slice of bread.

    Add Béchamel

    Spread a generous amount of béchamel sauce on top of each sandwich and sprinkle with shredded Gruyère cheese.

Grill the Sandwiches

    Melt Butter

    In a skillet, melt 4 tablespoons of butter over medium heat.

    Cook Sandwich

    Place the sandwiches in the skillet and grill for about 3-4 minutes on each side, until golden brown and the cheese is melted.

    Remove from heat, let cool for a minute, then slice and serve hot.
