Preheat the Oven
Preheat your oven to 200°C (400°F).

Prepare the Mushrooms
Gently clean the mushrooms with a damp cloth to remove any dirt. Carefully remove the stems and set aside for later use.

Cook the Spinach
In a skillet, heat 1 tablespoon of olive oil over medium heat. Mince the garlic and add it to the skillet, sautéing for about 1 minute until fragrant. Add the fresh spinach and cook until wilted, about 3-4 minutes. Season with salt and black pepper. Remove from heat and let cool.

Chop the Prosciutto
While the spinach cools, finely chop the prosciutto and mushroom stems.
Stuffing

Make the Filling
In a mixing bowl, combine the sautéed spinach, chopped prosciutto, mushroom stems, cream cheese, and grated Parmesan cheese. Mix until well combined. Adjust seasoning with more salt, black pepper, and red pepper flakes if desired.

Stuff the Mushrooms
Using a spoon, generously fill each mushroom cap with the stuffing mixture, pressing down gently to ensure they are well filled.

Prepare for Baking
Place the stuffed mushrooms on a baking tray lined with parchment paper. Drizzle the remaining olive oil over the stuffed mushrooms.

Bake the Mushrooms
Bake in the preheated oven for 15-20 minutes or until the mushrooms are tender and the tops are golden brown.
