    Cook the Shrimp

    In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp, paprika, salt, and black pepper. Cook for 3-4 minutes or until the shrimp turn pink and are fully cooked. Remove from heat and set aside.

    Prepare the Grits

    In a medium saucepan, bring the water to a boil. Stir in the grits and salt. Reduce the heat to low, cover, and cook for about 20-25 minutes, stirring occasionally until thickened. Remove from heat and stir in the butter and cheddar cheese until melted and creamy.

Andouille Gravy

    Make the Gravy

    In a separate saucepan, melt the butter over medium heat. Add the sliced andouille sausage and cook until browned. Sprinkle in the flour and whisk continuously for about 2 minutes to make a roux. Slowly whisk in the chicken broth and heavy cream. Add the Cajun seasoning and black pepper, and continue to cook for about 5-7 minutes until the gravy thickens.

    Serve the Dish

    To serve, spoon a generous portion of the cheesy grits onto a plate, top with the cooked shrimp, and drizzle the andouille gravy over everything. Enjoy your delicious shrimp and grits!
