Method

For the Poached Eggs

  1. 1

    Prepare the Water

In a large saucepan, bring 4 cups of water to a gentle simmer. Add 1 tablespoon of white vinegar to the water, which will help the eggs hold their shape while poaching.

  2. 2

    Poach the Eggs

Crack each egg into a small bowl. Once the water is simmering, create a gentle whirlpool by stirring the water. Carefully slide each egg into the center of the whirlpool. Poach the eggs for about 3-4 minutes for a runny yolk or longer if you prefer them more cooked.

  3. 3

    Remove and Drain

Using a slotted spoon, gently remove each poached egg from the water and place it on a paper towel to drain excess water.

For the Hollandaise Sauce

  1. 4

    Melt the Butter

In a small saucepan, melt 1 cup of unsalted butter over low heat until it is completely melted and hot but not boiling.

  2. 5

    Whisk the Egg Yolks

In a mixing bowl, whisk together 3 egg yolks and 1 tablespoon of lemon juice until the mixture is pale and thickened.

  3. 6

    Combine and Emulsify

Slowly drizzle the melted butter into the egg yolk mixture while continuously whisking. This will create a smooth and creamy sauce. If the sauce is too thick, you can add a teaspoon of warm water to adjust the consistency.

  4. 7

    Season the Sauce

Add 1 teaspoon of salt and 1 teaspoon of cayenne pepper to the hollandaise sauce, mixing well to combine.

For Assembly

  1. 8

    Prepare the Muffins

Toast the English muffins until golden brown. You can do this in a toaster or under a broiler.

  2. 9

    Layer the Ingredients

On each toasted English muffin half, place a generous layer of smoked salmon. Top with a poached egg, followed by a drizzle of hollandaise sauce.

  3. 10

    Garnish

Finish with a spoonful of caviar and a sprinkle of freshly chopped chives over the top.

  4. 11

    Serve

Serve immediately while warm and enjoy your delightful smoked salmon poached egg caviar hollandaise!
