    Wash the fresh green beans thoroughly under cold water. Trim the ends of the green beans and set them aside.

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold water until a smooth batter forms.

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is hot enough by dropping a small amount of batter into the oil; if it sizzles, it’s ready.

    Fry the Green Beans

    Dip the trimmed green beans into the batter, ensuring they are well coated. Carefully add them to the hot oil in batches, frying for about 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Peel the black garlic cloves and mash them in a bowl using a fork until smooth.
