Method

Preparing the Filet Mignon

    Season the Steaks

    Pat the filet mignon steaks dry with paper towels. Rub both sides with olive oil, then sprinkle salt and black pepper evenly over the steaks.

    Sear the Steaks

    In a large skillet over medium-high heat, add the seasoned filet mignon. Sear for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove and let rest.

Making the Red Wine & Mushroom Stroganoff

    Sauté the Vegetables

    In the same skillet used for the steaks, melt the butter over medium heat. Add the sliced mushrooms and chopped onion; sauté until softened, about 5-7 minutes. Add the minced garlic and cook for an additional minute.

    Deglaze the Pan

    Pour in the red wine, scraping up any brown bits from the bottom of the skillet. Bring to a simmer and let it reduce by half, about 5 minutes.

    Add the Broth and Cream

    Stir in the beef broth, then reduce the heat to low. Mix in the sour cream and Dijon mustard until well combined.

    Thicken the Sauce

    In a small bowl, mix cornstarch and water to create a slurry. Gradually add this to the stroganoff sauce, stirring constantly until thickened, about 2-3 minutes.

    Finish the Stroganoff

    Stir in the chopped parsley for freshness. Taste and adjust seasoning with salt and pepper if necessary.

Serving

    Plate the Dish

    Slice the rested filet mignon and serve it on a plate. Top generously with the red wine and mushroom stroganoff sauce. Garnish with additional parsley if desired.
