Dry Aged Ribeye

Prepare the Steak
Remove the dry-aged ribeye steak from the refrigerator and let it come to room temperature for about 30-60 minutes.

Season the Steak
Generously season both sides of the steak with kosher salt and black pepper.

Heat the Cast Iron Pan
Preheat a cast iron skillet over medium-high heat for about 5 minutes until hot.

Asher Blue Cheese Potatoes

Drain and Mash
Drain the potatoes and return them to the pot. Add heavy cream, butter, Asher blue cheese, and salt. Mash until smooth and creamy.

Serve
Transfer the mashed potatoes to a serving bowl and top with extra crumbles of Asher blue cheese if desired.
