Diver Scallops

    Prepare the Scallops

    Pat the diver scallops dry with a paper towel and season both sides with salt and black pepper.

    Sear the Scallops

    In a skillet, heat olive oil over medium-high heat. Once hot, add the scallops and sear for 2-3 minutes on each side until they are golden brown and cooked through. Remove from skillet and set aside.

    Finish with Butter

    Add butter to the skillet and melt. Spoon the melted butter over the scallops before serving.

Parmesan Peppercorn Risotto

    Prepare the Broth

    In a saucepan, heat the chicken or vegetable broth until simmering. Keep it warm over low heat.

    Cook the Aromatics

    In a separate large skillet, heat olive oil over medium heat. Add shallots and garlic, cooking until softened, about 3-4 minutes.

    Toast the Rice

    Add Arborio rice to the skillet and cook for 1-2 minutes, stirring frequently until the rice is slightly translucent.

    Pour in 1 cup of warm broth, stirring constantly until the liquid is absorbed. Repeat this process, adding broth one cup at a time until the rice is creamy and al dente, about 18-20 minutes.

    Stir in the grated Parmesan cheese and crushed black peppercorns. Add butter for creaminess. Adjust salt to taste.

Skillet Corn

    In a skillet, melt butter over medium heat. Add fresh corn kernels and sauté for about 5-7 minutes until tender and slightly caramelized.
