Chili-Lime Gulf Shrimp

    Marinate the Shrimp

    In a bowl, mix lime juice, chili powder, minced garlic, olive oil, salt, and black pepper. Add the shrimp and toss until well coated. Cover and let marinate in the refrigerator for at least 15 minutes.

    Cook the Shrimp

    Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until they are pink and opaque. Stir in chopped cilantro before serving.

    Rinse the Rice

    Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.

    In a saucepan, combine the rinsed rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit for 5 minutes before fluffing with a fork.

Bok Choy

    Sauté the Bok Choy

    In a separate skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant. Add the chopped bok choy and sauté for 5-7 minutes until tender. Season with salt and black pepper to taste.

    Toast the Sesame Seeds

    In a small dry skillet, toast the sesame seeds over medium heat for 2-3 minutes, stirring frequently, until golden brown. Remove from heat and let cool.
