Activate the Yeast
In a small bowl, combine warm water (110°F to 115°F), sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

Mix the Dough
In a large mixing bowl, combine all-purpose flour, whole wheat flour, and salt. Create a well in the center and add the activated yeast mixture along with olive oil.

Knead the Dough
Mix until the dough comes together. Transfer to a floured surface and knead for about 8-10 minutes until smooth and elastic. Add flour as needed.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Breads
After the dough has risen, punch it down, and divide it into smaller portions. Shape them into loaves, rolls, or any preferred shape.

Second Rise
Place the shaped dough on a baking sheet dusted with cornmeal. Cover with a cloth and let rise for another 30-45 minutes.

Preheat the Oven
Preheat your oven to 375°F (190°C) while the dough is rising for the second time.

Bake the Breads
Once the dough has risen, bake in the preheated oven for 25-30 minutes or until golden brown and sounds hollow when tapped on the bottom.

Cool and Serve
Remove the breads from the oven and let them cool on a wire rack. Serve warm or at room temperature with a selection of dipping oils or spreads.
