Method

For the Airline Chicken Breast

    Prepare Chicken

    Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and pepper.

    Sear the Chicken

    In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts skin-side down and sear for 4-5 minutes until golden brown.

    Roast in Oven

    Flip the chicken breasts, add butter on top, and transfer the skillet to the preheated oven. Roast for 20-25 minutes or until the internal temperature reaches 165°F (75°C).

For the Bacon-Corn Hash

    Cook Bacon

    In a large skillet, cook the bacon slices over medium heat until crispy. Remove and crumble, leaving the bacon fat in the pan.

    Sauté Vegetables

    Add olive oil to the skillet with bacon fat. Sauté onion, red and green bell peppers until soft, about 5 minutes.

    Add Corn

    Stir in the corn, season with salt and pepper, and cook for another 3-4 minutes until heated through.

    Combine with Bacon

    Add the crumbled bacon back into the skillet, mix well, and keep warm.

For the Sautéed Spinach

    Sauté Garlic

    In a separate skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Add Spinach

    Add fresh spinach to the skillet, season with salt and pepper, and sauté until wilted, about 2-3 minutes.

For the Pan Au Jus

    Make Au Jus

    In the same skillet used for the chicken, add chicken stock and bring to a simmer. Whisk in butter and season with salt and pepper to taste.
