Andouille Encrusted Redfish

Prepare the Andouille Mixture
In a bowl, combine the diced Andouille sausage and Panko breadcrumbs. Mix well and set aside.

Coat the Redfish
Preheat your oven to 375°F (190°C). Brush each redfish fillet with Dijon mustard on both sides, then season with salt and black pepper.

Crust the Redfish
Press the Andouille breadcrumb mixture onto the top side of each fillet, ensuring they are well-coated.

Bake the Redfish
Drizzle olive oil over the crusted fillets and place them on a baking sheet. Bake in the preheated oven for 15-20 minutes or until the fish is cooked through and the crust is golden brown.

Sauté Shallots and Garlic
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the diced shallots and minced garlic; sauté until translucent.

Add Arborio Rice
Add the Arborio rice to the skillet and stir for about 2 minutes, allowing the rice to toast slightly.

Gradually Add Broth
Begin adding the chicken broth one cup at a time, stirring frequently. Allow the rice to absorb the liquid before adding the next cup. Continue this process for about 18-20 minutes.

Incorporate Crawfish
When the rice is creamy and al dente, stir in the crawfish tails, Parmesan cheese, and season with salt, black pepper, and chopped parsley.

Finish the Risotto
Remove from heat and stir in the remaining butter for added richness. Adjust seasoning if necessary.

Prepare the Peppers
If using fresh red bell peppers, roast them until charred, then peel and remove seeds. Alternatively, use jarred roasted red peppers.

Blend Ingredients
In a blender, combine the roasted red peppers, olive oil, balsamic vinegar, minced garlic, salt, and black pepper. Blend until smooth.

Taste the coulis and adjust seasoning as needed. Set aside until ready to serve.
