Method
Prepare the Chicken Tenders
Marinate Chicken
In a bowl, soak the chicken tenders in buttermilk for at least 30 minutes.
Coat Chicken
Remove chicken from buttermilk, let excess drip off, and coat in the flour mixture.
Fry Chicken
Heat vegetable oil in a pan over medium heat. Fry chicken tenders until golden brown and cooked through, about 5-7 minutes. Drain on paper towels.
Make the Waffles
Mix Dry Ingredients
In a large bowl, whisk together flour, baking powder, sugar, and salt.
Combine and Cook
Pour wet ingredients into dry ingredients and stir until just combined. Preheat waffle iron and cook according to manufacturer's instructions until golden.
Prepare Sweet Potato Fries
Cut and Season
Preheat oven to 425°F (220°C). Cut sweet potatoes into fries, toss with olive oil, salt, and paprika.
Bake Fries
Spread fries on a baking sheet and bake for 20-25 minutes, flipping halfway through, until crispy.
Assemble the Dish
Layer and Serve
On a plate, layer two waffles, add fried chicken tenders on top, and drizzle with Garlic Dill Sauce and sweet sriracha. Serve with sweet potato fries and ancho chipotle mayo on the side.
