Five rich cheeses blended with spinach in a skillet. Served with crispy Cajun-seasoned tortilla chips. Serves 2.
In a large skillet over medium heat, add the chopped spinach and minced garlic. Sauté until the spinach wilts, about 2-3 minutes.
Reduce heat to low. Add cream cheese, sour cream, mozzarella, cheddar, Parmesan, and feta to the skillet. Stir until all the cheeses are melted and the mixture is smooth. Season with salt and black pepper to taste.
In a bowl, toss the tortilla chips with Cajun seasoning to taste. Serve the cheesy spinach dip warm with the seasoned tortilla chips.
