Omelette Preparation

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and place on paper towels to drain excess grease. Once cooled, chop into small pieces.

    Prepare the Potatoes

    In the same skillet, add diced breakfast potatoes and cook until golden brown and tender, about 10-15 minutes. Season with salt and pepper. Remove and set aside.

    Mix the Eggs

    In a bowl, whisk together the eggs, salt, and black pepper until well combined.

    Cook the Omelette

    In a clean skillet, add a bit of oil or butter and heat over medium-low heat. Pour in the egg mixture and let it cook undisturbed until the edges start to lift.

    Add Fillings

    Once the omelette is mostly set, sprinkle the cooked bacon, green onions, and cheese blend on one half of the omelette. Fold the other half over the fillings.

    Finish Cooking

    Let cook for another minute, then slide the omelette onto a plate. Serve with breakfast potatoes on the side.
