    Marinate the Steak

    In a bowl, mix soy sauce, olive oil, minced garlic, and chopped rosemary. Add the sirloin steak, ensuring it's well coated. Cover and marinate in the refrigerator for at least 30 minutes.

    Prepare the Fries

    Peel the potatoes and cut them into thin strips. Rinse the fries under cold water to remove excess starch. Pat dry with a paper towel.

    Cook the Fries

    Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Remove the steak from the marinade and season with salt and pepper. Grill for about 4-5 minutes per side for medium-rare, or until desired doneness. Let rest before slicing.

    Make the Hollandaise Sauce

    In a heatproof bowl, whisk together egg yolks, lemon juice, and water. Place over simmering water and whisk until thickened. Slowly drizzle in melted butter while continuing to whisk until smooth. Season with salt.

    Cook the Eggs

    In a separate pan, cook the eggs to your preference (fried, poached, etc.).

    Serve

    On a plate, place a portion of fries, sliced steak, and top with the cooked eggs. Drizzle with Hollandaise sauce.
