    Marinate the Chicken

    In a bowl, combine soy sauce, honey, minced garlic, grated ginger, and black pepper. Add the chicken breast pieces and ensure they are well coated in the marinade. Cover and refrigerate for at least 30 minutes.

    Prepare the Vegetables

    While the chicken is marinating, slice the bell pepper, julienne the carrot, and cut the broccoli into florets. Set the vegetables aside.

    Cook the Chicken

    In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Remove the chicken from the marinade (save the marinade) and cook the chicken for about 5-7 minutes, or until browned and cooked through. Remove from the skillet and set aside.

    In the same skillet, add the bell pepper, carrot, and broccoli. Stir-fry the vegetables for about 4-5 minutes until they are tender yet crisp.

    Return the cooked chicken to the skillet with the vegetables. Pour the reserved marinade over the chicken and vegetables, and cook for an additional 2-3 minutes to heat through and combine the flavors.
