    Prepare the Rice Noodles

    Bring a pot of water to a boil. Add the rice noodles and cook according to package instructions until tender. Drain and rinse under cold water to stop cooking. Set aside.

    Make the Sauce

    In a small bowl, combine soy sauce, fish sauce, brown sugar, lime juice, and chili paste. Stir well until the sugar is dissolved. Set aside.

Cooking

    Cook the Tofu

    Press the tofu to remove excess moisture and cut it into bite-sized cubes. In a non-stick skillet over medium heat, add a splash of oil. Add the tofu cubes and cook until golden brown on all sides, about 8-10 minutes. Remove from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add sliced red bell pepper and carrot (julienned). Sauté for 3-4 minutes until slightly tender but still crisp. Add chopped green onions and cook for an additional 1-2 minutes.

    Combine Everything

    Add the cooked rice noodles and tofu back to the skillet with the vegetables. Pour the prepared sauce over the top. Toss everything together gently until well combined and heated through, about 3-4 minutes.

Garnishing

    Serve

    Transfer the Thai noodles to serving plates. Garnish with fresh cilantro and crushed peanuts before serving. Enjoy your Thai Me!
