Prepare the Chicken
Season the chicken thighs with salt and black pepper on both sides.

Sear the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the chicken thighs, skin-side down, and sear for 5-7 minutes until golden brown. Flip and sear the other side for another 5 minutes. Remove the chicken from the skillet and set aside.

Make the Sauce
Add chicken broth, heavy cream, and lemon juice to the skillet. Stir well to combine, scraping up any browned bits from the bottom of the skillet.

Add Chicken Back
Return the seared chicken thighs to the skillet, skin-side up. Sprinkle fresh thyme over the top.

Simmer
Reduce heat to low and cover the skillet. Let it simmer for 30-35 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).

Once cooked, sprinkle the Parmesan cheese over the chicken and let it melt for a couple of minutes before serving.
