    Prepare the Fruit

    Wash and chop the fresh seasonal fruit into small pieces, removing any pits or stems. If using berries, you can leave them whole.

    In a small saucepan, combine the granulated sugar and water. Heat over medium heat, stirring occasionally until the sugar is completely dissolved. Remove from heat and let cool.

    In a blender, combine the chopped fruit, lemon juice, and cooled simple syrup. If using, add mint leaves for flavor. Blend until smooth.

    For a smoother texture, pour the blended mixture through a fine mesh strainer into a bowl, using a spatula to push the sorbet through and leave any solids behind.

Freezing

    Freeze the Sorbet

    Pour the sorbet mixture into an airtight container and place it in the freezer. Freeze for at least 4 hours or until solid.
