Preparation of Quinoa

Cook Quinoa
Rinse the quinoa under cold water in a fine mesh strainer. In a medium saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for an additional 5 minutes, then fluff with a fork.

If using fresh corn, cut the kernels off the cob. Heat a skillet over medium heat and add 1 tablespoon of olive oil. Add the corn kernels and sprinkle with salt and pepper. Sauté for about 5-7 minutes until they are slightly charred and tender. If using canned corn, simply drain and rinse the corn.
Cucumber Salad

Dice the cucumber into small pieces. In a bowl, combine the diced cucumber with 1 tablespoon of olive oil, salt, and black pepper. Toss to combine and set aside.
Pickled Onions

Thinly slice the red onion. In a small bowl, mix together 1/4 cup of vinegar, 1 tablespoon of sugar, and 1/2 teaspoon of salt until the sugar dissolves. Add the sliced onions, ensuring they are submerged. Let sit for at least 15 minutes for the flavors to develop.

Assemble the Power Bowl
In a large bowl, layer the cooked quinoa, followed by the sautéed corn, fresh spinach, cucumber salad, sliced avocado, and pickled onions. Drizzle with additional olive oil if desired, and serve immediately.
