Roasting the Tomatoes
Preheat your oven to 400°F (200°C). Slice the tomatoes in half, drizzle with olive oil, and season with salt and pepper. Place them cut-side up on a baking sheet and roast for about 25-30 minutes until they are soft and slightly caramelized.

Assembling the Sandwich
While the tomatoes are roasting, grate or slice the aged cheddar cheese. Once the tomatoes are finished roasting, remove them from the oven and allow them to cool slightly.

Grilling the Sandwich
Heat a skillet over medium heat. Spread one tablespoon of butter on one side of each slice of sourdough bread. Place two slices of bread, buttered-side down, in the skillet. Layer half of the aged cheddar cheese on each slice in the skillet.

Adding Fillings
Add a layer of roasted tomatoes on top of the cheese, then top with the remaining aged cheddar cheese. Place the other two slices of bread on top, buttered-side up.

Flipping and Finishing
Cook for about 3-4 minutes until the bottom is golden brown. Carefully flip the sandwiches and cook for an additional 3-4 minutes until the other side is also golden brown and the cheese is melted.
Serving

Slice and Serve
Remove the sandwiches from the skillet and let them cool for a minute. Cut in half and serve immediately, enjoying the melty cheese and warm roasted tomatoes.
