Prepare the Shoestring Fries
Preheat your oven to 425°F (220°C). Spread the shoestring potatoes onto a baking sheet in a single layer. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.

Season the Fries
Once the fries are baked, remove them from the oven. In a large bowl, toss the hot fries with truffle oil, minced garlic, grated Parmesan, salt, and black pepper until evenly coated.
Pickled Red Onion

Slice and Pickle the Onion
Thinly slice the red onion and place it in a jar. In a small saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil, stirring until the sugar dissolves. Pour the hot liquid over the sliced onions in the jar and let it sit for at least 30 minutes to pickle.
Citrus Slaw

Prepare the Slaw
Shred the cabbage and carrot using a knife or grater. In a bowl, combine the shredded cabbage, grated carrot, and orange segments. In a small bowl, whisk together lime juice, olive oil, and salt. Pour the dressing over the slaw and toss to combine.
