Filet Mignon Preparation

Season the Steaks
Pat the filet mignon steaks dry with paper towels. Rub olive oil over both sides of the steaks. Season generously with salt and black pepper.

Sear the Steaks
Heat a skillet over medium-high heat. Once hot, add the seasoned steaks and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

Add Aromatics
In the last minute of cooking, add the crushed garlic cloves and fresh rosemary to the skillet. Spoon the pan juices over the steaks to infuse them with flavor.

Rest the Steaks
Remove the steaks from the skillet and let them rest for 5 minutes before serving.

Drain and Mash
Drain the cooked potatoes and return them to the pot. Add the butter, heavy cream, salt, and black pepper.

Whip the Potatoes
Using a potato masher or a hand mixer, mash the potatoes until smooth and creamy. Adjust the seasoning if needed.

Serve
Spoon the mashed potatoes onto plates and serve alongside the filet mignon.
