Season the Shrimp
In a bowl, season the peeled and deveined shrimp with salt and black pepper. Toss well to ensure each shrimp is evenly coated.

Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of shredded coconut and panko breadcrumbs.

Coat the Shrimp
Take each shrimp, dip it first into the flour, ensuring it’s fully coated, then into the beaten eggs, and finally into the coconut-panko mix. Press the breadcrumbs onto the shrimp to adhere well.
Frying

Heat the Oil
In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp
Once the oil is hot, carefully add the breaded shrimp in batches. Fry for about 2-3 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

In a mixing bowl, combine mayonnaise, sweet chili sauce, lime juice, and sriracha sauce. Stir until well mixed and smooth.
