    Cook the Chicken

    In a skillet over medium heat, add a little oil and let it heat up. Add the boneless, skinless chicken breast and cook for 6-8 minutes on each side, or until fully cooked through. Remove from heat and let it rest.

    Shred the Chicken

    Once the chicken has cooled, shred it using two forks or your hands and place it in a bowl. Pour the sweet soy sauce over the shredded chicken and mix well to combine.

    Prepare the Lettuce Wraps

    Carefully separate the Bibb lettuce leaves, wash them under cold water, and gently pat them dry with a paper towel. Set aside.

    Slice the Fresno Peppers

    Slice the Fresno chili peppers into thin rings. Remove seeds if you prefer less heat.

    Prepare the Onions

    Thinly slice the red onion and place it in a clean glass jar.

    Make the Pickling Solution

    In a small saucepan, combine white vinegar, sugar, and salt over medium heat. Stir until the sugar and salt have dissolved.

    Pickle the Onions

    Pour the hot vinegar mixture over the sliced onions in the jar, ensuring the onions are fully submerged. Allow them to cool to room temperature, then cover and refrigerate for at least 30 minutes before serving.
