Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix the Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.

Coat the Calamari
Dip each calamari ring first into the egg mixture, then coat it in the flour mixture, and finally in the breadcrumbs. Set aside on a plate.

Heat the Oil
In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 375°F (190°C).

Fry the Calamari
Once the oil is hot, carefully add the calamari rings in batches, frying for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, oregano, salt, black pepper, and sugar. Bring to a simmer.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

Finish the Sauce
Add the chopped fresh basil just before serving. Stir and remove from heat.
