Rice Mixture

Method

Preparing the Rice Mixture

  1. 1

    Cook the Rice

In a medium-sized pot, heat 1 tablespoon of vegetable oil over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent, about 5 minutes. Stir in the Arborio rice and cook for another 2 minutes.

  2. 2

    Add Broth

Gradually add the vegetable broth to the pot, one cup at a time, stirring frequently. Allow the rice to absorb the broth before adding more. Cook until the rice is al dente, about 18-20 minutes.

  3. 3

    Stir in Remaining Ingredients

Once the rice is cooked, remove it from the heat and stir in the frozen peas, grated Parmesan cheese, beaten egg, salt, and black pepper. Mix until well combined. Spread the mixture onto a baking sheet and let it cool completely.

Forming and Coating

  1. 4

    Shape the Arancini

Once the rice mixture is cool, take a handful of the mixture and form it into a ball about the size of a golf ball. Make a small indentation in the center and add a small piece of cheese (if desired) before sealing it up.

  2. 5

    Prepare for Coating

Set up a breading station with three bowls: one with all-purpose flour, one with beaten eggs, and one with bread crumbs.

  3. 6

    Coat the Balls

Roll each rice ball in flour, dip it in the beaten egg, and then coat it with bread crumbs. Ensure each ball is fully coated.

Frying the Arancini

  1. 7

    Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C).

  2. 8

    Fry the Arancini

Carefully add a few arancini at a time to the hot oil, frying them until they are golden brown and crispy, about 4-5 minutes. Remove them with a slotted spoon and drain on paper towels.

  3. 9

    Serve

Serve the arancini warm with marinara sauce or your favorite dipping sauce.
