Preparing the Pork Belly

Preheat the Oven
Preheat your oven to 400°F (200°C) to prepare for roasting the pork belly.

Season the Pork Belly
Pat the pork belly dry with paper towels. Rub the salt, black pepper, and garlic powder evenly over the entire surface of the pork belly.

Cut the Pork Belly
Cut the pork belly into bite-sized cubes, roughly 1-2 inches in size.

Add Oil and Roast
Place the pork belly cubes in a large bowl, drizzle with olive oil, and toss to coat. Spread the cubes evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, or until crispy and golden brown, flipping halfway through.
Making the Sweet Chili Sauce

Combine Ingredients
In a small bowl, mix together the sweet chili sauce, lime juice, chopped fresh cilantro, and red chili flakes until well combined.

Adjust Seasoning
Taste the sauce and adjust sweetness or heat by adding more chili flakes if desired.
Serving

Plate the Pork Belly Bites
Once the pork belly bites are crispy and cooked through, remove them from the oven and let them cool for a couple of minutes.

Serve the crispy pork belly bites on a platter alongside the sweet chili sauce for dipping.
