Cooking Pasta

Prepare the Pasta
In a large pot, bring water to a boil. Add a pinch of salt. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add the Vegetables
Add the bell peppers, zucchini, carrots, broccoli, and cherry tomatoes to the skillet. Sauté for 5-7 minutes until the vegetables are tender but still crisp.

Add Spinach
Stir in the spinach and cook until wilted, about 2 minutes.
Making the Sauce

Combine Sauce Ingredients
Pour in the vegetable broth and lemon juice. Stir well to combine. Season with salt and black pepper to taste.
Final Assembly

Mix Pasta and Sauce
Add the cooked pasta to the skillet with the sautéed vegetables and sauce. Toss everything together until well combined and heated through.
