Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.

Separate Eggs
While the chocolate mixture cools, separate the egg yolks from the egg whites. Place the yolks in a large mixing bowl.

Mix Yolks and Sugar
Add granulated sugar to the egg yolks and whisk until the mixture is pale and creamy.

Combine Chocolate with Yolks
Slowly pour the melted chocolate mixture into the egg yolk mixture, whisking constantly until well combined.

Fold Egg Whites
Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

Whip Cream
In another bowl, whip the heavy cream with vanilla extract until soft peaks form.

Fold the whipped cream into the chocolate mixture until fully incorporated.

Chill Mousse
Spoon the mousse into serving dishes and refrigerate for at least 2 hours or until set.

In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Beat with a mixer until soft peaks form.

Serve the chocolate mousse chilled, topped with a generous dollop of whipped cream.
