Cake Preparation

Preheat the Oven
Preheat your oven to 200°C (400°F) to ensure it is hot enough when the cakes are ready to bake.

Melt Chocolate and Butter
In a heatproof bowl, combine the bittersweet chocolate and unsalted butter. Melt them together over a double boiler or in the microwave, stirring until smooth. Allow to cool slightly.

Mix Sugar and Eggs
In a separate mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is pale and slightly thickened.

Combine Mixtures
Pour the melted chocolate mixture into the egg mixture, and add the vanilla extract. Stir gently until combined.

Add Flour
Sift the all-purpose flour over the chocolate mixture and fold gently until just combined. Be careful not to overmix.

Pour Batter
Evenly distribute the batter into the prepared ramekins, filling each about 3/4 full.

Bake
Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

Cool Slightly
Remove the ramekins from the oven and let them sit for 1-2 minutes. Carefully run a knife around the edges to loosen the cakes.

Invert and Serve
Invert the cakes onto a plate and serve immediately with scoops of vanilla ice cream on the side.
