Calamari Preparation

Prepare the Calamari
In a large bowl, combine the cleaned calamari rings and buttermilk. Allow to marinate for at least 30 minutes in the refrigerator.

Mix the Dry Ingredients
In a separate bowl, mix the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder until well combined.

Heat the Oil
In a deep pot or large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge the calamari rings in the flour mixture, ensuring they are fully coated.

Fry the Calamari
Carefully add the coated calamari to the hot oil in batches, frying for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasonings
Stir in the canned crushed tomatoes, oregano, basil, salt, black pepper, and sugar. Bring to a simmer.

Simmer the Sauce
Reduce heat and let the sauce simmer for about 15-20 minutes, stirring occasionally, until thickened.
