    Prepare the Base

    In a large pot, melt 4 tablespoons of butter over medium heat. Add the onion, celery, carrot, and garlic, and sauté until the vegetables are soft, about 5 minutes.

    Add Potatoes and Stock

    Stir in the diced potatoes and add 4 cups of seafood stock. Bring to a boil, then reduce the heat and let it simmer until the potatoes are tender, about 15 minutes.

    Add the Seafood

    Add the clams, shrimp, and crab meat to the pot. Simmer for an additional 5-7 minutes, or until the shrimp are pink and the clams are heated through.

    Make it Creamy

    Stir in 2 cups of heavy cream and season with salt and pepper to taste. Allow the chowder to warm through for another 5 minutes.

    Serve

    Ladle the chowder into bowls and garnish with fresh parsley, if desired. Serve hot.
