Prepare the Apples
Wash, core, and chop the apples into small pieces. Place them into a large pot.
Strain the Mixture
Using a fine mesh strainer or cheesecloth, strain the apple mixture into another pot or large container to extract the juice. Discard the solids.
Fermentation
Add the yeast and cinnamon sticks to the apple juice. Stir gently to combine. Cover the container with a cloth and let it ferment in a cool, dark place for about 1 to 2 weeks.
Bottling
After fermentation, remove the cinnamon sticks and transfer the cider into clean bottles, leaving some space at the top. Add a tablespoon of lemon juice to each bottle.
Carbonation
Seal the bottles and allow them to carbonate at room temperature for 3-5 days. After carbonation, refrigerate the cider before serving.
