Bake the Potatoes
Spread the seasoned potatoes on a baking sheet in a single layer. Bake for 25-30 minutes or until golden and crispy, stirring halfway through. Remove from the oven and sprinkle with fresh parsley.

Poach the Eggs
Bring a pot of water to a gentle simmer. Crack each egg into a small bowl. Create a gentle whirlpool in the water and carefully slide the eggs in. Poach for about 3-4 minutes for soft yolks. Remove with a slotted spoon and drain on a paper towel.

While the eggs are poaching, split the English muffins and toast them until golden brown.
