Preparation

Prepare the Seafood
Begin by cooking the lobster. Boil it in salted water for 15-20 minutes or until fully cooked. Remove from water and let cool, then crack open and remove the meat. For the snow crab, steam for around 10-12 minutes until heated through. Clean the oysters under cold water and keep them on ice. Poach the prawns in simmering water for about 3-4 minutes until pink, then chill. Steam the mussels until they open, discarding any that do not open. For the tuna tataki, sear the tuna in a hot pan for 30 seconds on each side, then slice thinly. Prepare the prawn ceviche by marinating cooked prawns in lime juice with diced onions, cilantro, and jalapeños for at least 30 minutes.
Assembly

Assemble the Seafood Tower
On a large platter or seafood tower, arrange the seafood aesthetically. Place the lobster meat in the center, surrounding it with the snow crab legs, oysters, poached prawns, mussels, and tuna tataki. Add the prawn ceviche in a small bowl on the side. Garnish with fresh parsley and lemon wedges. Serve with cocktail sauce, soy sauce, and wasabi on the side.
