Dough Preparation

    Make the Pasta Dough

    In a mixing bowl, combine the flour and salt. Create a well in the center, crack in the eggs, and gradually mix the flour into the eggs until a dough forms. Knead the dough for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Filling Preparation

    Prepare the Lobster Filling

    In a bowl, mix together the lobster meat, ricotta cheese, Parmesan cheese, salt, black pepper, and lemon zest until well combined. Set aside.

Ravioli Assembly

    Roll Out the Dough

    After resting, roll out the dough into thin sheets. Place small mounds of the lobster filling on one sheet, leaving space between each mound. Moisten the edges with water, then place another sheet of dough on top and press down to seal. Cut into individual ravioli shapes.

Cooking the Ravioli

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for about 4-5 minutes until they float to the surface. Remove with a slotted spoon and set aside.

Topping Preparation

    Prepare the Lemon Butter Sauce

    In a skillet, melt the butter over medium heat. Add the prawns and cook until they turn pink, about 2-3 minutes. Stir in the lemon juice and season with salt and pepper.

    Sauté Sweetie Peppers

    In the same skillet, add the sweetie peppers and sauté for another 2-3 minutes until tender.

Plating

    Serve the Ravioli

    Place the cooked ravioli on plates, top with the lemon butter sauce, prawns, and drizzle with salsa verde. Garnish with the sautéed sweetie peppers.
