Fish Preparation

Prepare the Fish
Rinse the fish fillets and pat dry. Cut them into strips.

Batter the Fish
In a bowl, mix flour, cornmeal, salt, black pepper, and cayenne pepper. In another bowl, beat the eggs. Dip each fish strip first in the egg, then coat with the flour mixture.

Fry the Fish
Heat vegetable oil in a deep pan over medium-high heat. Fry the fish strips until golden and crispy, about 3-4 minutes per side. Drain on paper towels.
Slaw Preparation

Make the Slaw
In a large bowl, combine shredded cabbage, grated carrot, honey, chipotle sauce, lime juice, and salt. Toss well and refrigerate for at least 30 minutes.
Aioli Preparation

Prepare Aioli
In a bowl, mix mayonnaise, minced chipotle peppers, lime juice, and minced garlic. Stir until well combined.
Salsa Preparation

In a bowl, combine diced tomatoes, red onion, chopped cilantro, lime juice, and salt. Mix well and set aside.
Assembling Tacos

Assemble the Tacos
Warm the corn tortillas. Place a few pieces of fried fish on each tortilla, top with honey chipotle slaw, drizzle with chipotle aioli, and add fresh cut salsa.

Serve immediately with lime wedges on the side.
