Preparing the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. Once done, let it rest for 10 minutes.

Preparing the Sesame Noodles

    Cook the Noodles

    Cook the noodles according to the package instructions. Drain and rinse under cold water. Toss with sesame oil and set aside.

Making the Sriracha Aioli

    Mix the Aioli

    In a bowl, combine sriracha, mayonnaise, and a pinch of salt. Mix well and adjust the spice level to your taste.

Assembling the Poke Bowl

    Layer the Ingredients

    In a bowl, start with a base of sushi rice. Top with diced ahi tuna, mango, edamame, shredded carrots, shredded red cabbage, and mixed greens. Add sesame noodles on the side.
